We make one too. You can't measure the degrees correctly with a areometer, only by distillation. The presence of honey residue increases the density of the solution.

I don't know what an areometer is, what did I measure wine with? I don't remember, but you can measure the degree in mead with one of these.

In general, it's the taste that determines the degree.)
