I have no idea how to do any of this, a complete novice. How do I add a symbol?

how to get the symbol CAC40, US30USD, DAX30?

All the symbols are related to the broker: one broker is proposing some symbols for traders, the other broker is proposing some other symbols for traders.
You should find the broker with those symbols.

Find Metatrader broker (there are a lot of Metatrader brokers, use google to find), and open the account according to their condition on their websites.
Try with demo first.
