Yes, you need to perform the initial setup on a desktop MetaTrader terminal.
You don't need to open any windows for each separate trading account, but you will need to perform each signal subscription setup for each trading account separately.

If you want to apply a MQL5.com signal subscription to each one of your trading accounts, yes you will need to set them up separately one by one.
And now, most importantly: This means that I need to be sure that the broker I use has the same trading pairs available as the signal EA provider!!! Is my understanding correcton this topic?

Yes, exactly, its better to ask the signal provider for the best broker/server setups or check the Slippage tab of the signal you are interested in, for the broker/server setups most other subscribers use.
Prefer those with the most executed trades and the lowest slippage, on the upper green and yellow values.

1 When I subcribe and copy a signal of a trader, do I then still need to go thruogh the process of setting up a broker or does the platform automatically trade for me and is it click and sit back?
