What is the workspace?

I was expecting to be able to spread my EAs across multiple workspaces and switch to observe status and control as needed.

You need to keep a chart open for each EA that you're running. Set up each chart as desired and save the setup as a chart template. Note that if an EA is attached while saving the template, it will instantly load and run upon loading the chart template. Therfore, be sure to disable auto-trading prior to loading templates if you choose to do this.
If you're running many charts/EA's you may want to install an additional MT5 terminal or terminals and segregate the burden on each terminal proportionally to the other terminals.
If you want to save small amounts of data stored in EA variables in the terminal itself, have a look at terminal-wide MQL5 GlobalVariables.

EAs do not seem to be running in parallel when put on different workspaces in same MT5 terminal.
Switching workspace seems to be reloading and initializing the EAs losing current state.
