Just compare WET and market watch in the terminal. In new versions I will use WET because GMT does not include daylight saving time. Now WET = GMT. From March 26 WET = GMT + 1.

Plus, you probably installed an incorrect WET offset. For MetaQuotes-Demo server WET offset will be +2.
Here is testing for the same period with the right parameters and a spread of 3 points:

If my broker time is 16:50 and WET is 13:50. Then I should set WET +3 ?

No. Uncorrect. Some websites shows WET without daylight saving time. Be careful. This website: (https://greenwichmeantime.com/to/wet) shows correctly.
Now WET is GMT + 1.
So the offset will be + 2.
What happened to the accounts from Monday's French election news was pretty bad.
Can you implement a filter for large gaps after weekends? (Sunday night market opening)
Maybe don't allow the EA to trade for an hour when market returns from the weekend while it works out if there was a large gap and then maybe wait
until the next day to trade again?

Hello! A new version of the EA will soon be available, in which it will be possible to prohibit the opening of trades on Friday evening. This will help avoid gaps after weekends.
A few words about the situation with the Monday's gap. Yes, this is a bad situation, it can take a couple of months to recover. I hope that this will not happen again. The main thing - do not overestimate the risks.

This is a normal situation. Most likely you tested with a fixed spread. Perhaps there was a too high spread or other circumstances that the strategy tester did not take into account.
Plus, the work of the EA is slightly different for different brokers. This is due to the different flow of quotes, spread and other conditions.
The results of testing coincide by 70 - 90% with real trade (when testing with a simulation quality of 99%).

Now WET is GMT + 1. So you should choose WET + 1 in the EA settings.
But you wrote before that your broker is ICMarkets. Time of his server is GMT + 3 (or WET +2). Be careful.

I moved to Dukascopy to hopefully get results more the same as backtesting in 99%
