It turns out that (SMA) 6 must always be between 5 and 7 exactly in the centre .... but it's not...

What makes you think that? It shouldn't. The sample length is different.

Well, we agreed not to construct integer periods, i.e., say, make 5 and 7 into 6.
In fact, simple wizards have different averaging windows. This immediately indicates that 5 and 7 will not make 6.
