I want to be able to update MetaTrader whenever I want, not be forced to do so.

Here's my question: I'd prefer not to be forced to update MetaTrader 5 every time an update comes out, like the one from this past weekend which basically had a problem because the update didn't "sign/recognize the developer" and Windows wouldn't open the file.

I made the change in Windows and solved the problem, but it's something I don't want to worry about. I just want to get MT5 running and have control over the updates. I know I can just click "later," but that "later" option always appears.

I just want my EAs running and to update on the weekend, for example. Is this possible? If so, how do I do it?

It only updates on start. Don't close the terminal until “the weekend, for example.”
 
It's not possible.
 

If you install the custom/branded MT5 terminal from your broker's website, will only be updated to major stable updates and not to any minor beta builds.

For example the MT5 terminal that I have installed from my broker was using the last 5660 stable build since February and on Saturday was updated to 5800.

The default MetaQuotes MT5 terminal, follows all minor updates.
