settings of the broker server is not correct because at 5 PM of New York (that is the official time of closing of the FOREX market), in Italy they are the 11 PM and not the 2 AM.
All broker would owe setting the server time on NY time and would be correct
This is not true. Forex is not centralized, so it is a bit different from like NASDAQ or Borsa Italiana. Why should anyone adjust to EST time? Forex is not related to US markets more than any other markets.
Some brokers adjust their server to their local time, most of them adjust to GMT (better to say UTC), whatever it is. (Just see summer time switches, some brokers switch, some dont)
So there is lot of confusion (even in the concept), the best is if you adjust yourself to your brokers settings, because this is the standard you need to follow, if you would like to trade with them.
All in all, check your brokers clock, the bars will be formed accordingly (yes, some brokers have sunday bar, some doesn't), and watch out for possible daylight savings anomalies.
